I saw this TikTok awhile back of a mom sneaking in a can of black beans into these chocolate muffins for her kids. I was intrigued and wanted to try because the outcome did seem like regular chocolate muffins/cupcakes! However… I was in the mood for a brownie as I’m not much of a muffin girl, oops. Hence, these black bean banana brownies. 🍌🍫🤤 DON’T WORRY, you do not taste black beans at allll. zilch. The banana, cocoa, and sweetener make sure of that 🙂 I love how much fiber these have, the crackly top you still get, and the richness of the moisture inside. Black Bean Banana Brownies
Ingredients
- 1 ripe banana ~120g
- 1 can 15oz/425g black beans, drained & rinsed well
- 1/3 cup maple syrup/ honey 80ml
- 2-3 tbsp cocoa powder 12g
- 2 tbsp melted coconut oil or butter 28g
- 1 egg ~50g
- 1 tsp vanilla
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/3 cup dark chocolate chips optional
Instructions
- Heat oven to 350°F (175°C). Line 8×8 pan with parchment.
- Blend beans, banana, syrup, melted oil/butter, egg, vanilla until very smooth.
- Blend in cocoa, baking soda, and salt slowly until combined.
- Fold in chips if using and add other toppings of choice.
- Bake 22–28 min (until toothpick comes out clean).
- Cool completely before slicing.
- Enjoy by themselves or with ice cream, a nut butter, etc. 🙂
